Pangere to get the lighter bellies and muzzles. Then based be red dun, Grullo, buckskin dun, cremello (white dun,) palomino dun and maybe brown/bay dun? Wild bay dun would look nice
I can't get the two toned manes in game but I can Mohawk everyone. Height starring at 13 hands and going no more than 15. Ideal horses would be 14 hands. Unsure on bone.
EDIT should I add silver? Silver isn't a gene I like that much but it would give the illusions of the 2 toned mane. Maybe I'll just keep a few silver and the red without

I was thinking breed them to a horse that has no Ssty and doesn't have (or doesn't appear to have) DP at all and see how dark the offspring is compared to a normal het Ssty horse of whatever color?
